Second installment of 5x5 Fridays: Korean Beef Tacos!
This recipe is beyond easy to make but super delicious.
If you want to marinate the beef, you'll need a few extra ingredients (I know it's meant to be just five shhhh), but you should have these extra bits in the cupboard! If not, the beef tastes good on its own, simply stir-fried in a spoon of oil.
500g beef strips (plus 1 tbsp sesame oil, 1 tbsp GF soy sauce, 1 tbsp GF sriracha or other chilli sauce, 1 tsp brown sugar to marinate)
1 cup purple cabbage, finely chopped,
1 avocado, roughly chopped
2 tablespoons sriracha mayo (1.5 tbsp GF mayo, 1 tbsp GF sriracha)
8 GF corn tortillas
Put five minutes on the clock ... Ready, steady, cook!
Throw the beef strips in a bowl and toss until well-coated with marinade.
Add the contents of the bowl to a wok over a high-heat. Stir-fry the beef until cooked through.
Heat the tortillas in the microwave or lightly toast in a fry pan over low heat.
Build the tacos by stacking beef, cabbage, avocado on top of each tortilla. Drizzle with sriracha mayo.
To make it extra fancy, garnish with kimchi sauerkraut, lime wedges and mint leaves, if desired.
