Although i often eat this for breakfast, it's really closer to a dessert. (In fact, if I had kids I would definitely serve them this as a 'treat' for dessert and keep it's nutrient-dense nature a secret) Thick and creamy, with almost a gelati-like taste and texture, it's hard to believe this dish is healthful! Even better, it takes just three ingredients and five minutes to prepare. Let's get started ...
1 large banana 1 cup frozen berries
2 tablespoons milk toppings of your choice (I like peanut butter, goji berries, kiwi fruit, coconut and strawberries)
Method Place the banana and berries into a high-powered blender or food processor and blitz for two to three minutes. Initially, it will seem too dry but RESIST the temptation to add milk. With time, the mixture will come smooth (you may have to pause the machine and stir the mix around a few times to achieve this). At this point, add the milk and blend until well combined.
Pour into a bowl (or jar for breakfast on the run) and decorate with your favourite toppings. If you need some inspiration, check out some of my favourite combos below ...
