Pesto chicken pasta

Just one of the creations from the GLUTENFREEGLOBAL x BARILLA giveaway. A quick and easy dinner packed with herby goodness.

Serves 4

Ingredients 200 grams Barilla gluten free penne 1 teaspoon extra-virgin olive oil 150 grams chicken breast, finely sliced 3 tablespoons pine nuts 1/2 cup Barilla Genovese pesto 1 cup spinach leaves 1 teaspoon crumbled feta basil leaves to garnish Method Cook the pasta as per the packet instructions. Next, heat the oil in a medium-sized pan. Add the chicken breast and cook until lightly browned. Add the remaining ingredients to the pan and cook for around five minutes, stirring well. Once cooked, stir through the pasta until it’s well coated in the sauce. Garnish with basil leaves and serve immediately.
