If you’re not in the mood for bread or happen to be a paleo follower – this tasty breakfast is for you!
Using avocado instead bread, boosts the healthy fat content of this dish. It’s also packed with protein and veggie goodness making it the perfect start to the day.
It’s sure to be insta-worthy too!
2 small avocados2 teaspoons of tomato relish2 pieces of bacon1 teaspoon sesame seeds
Sweet potato rosti1 small sweet potato, grated3 tablespoons flour1 egg1 teaspoon dukkah1 teaspoon paprika1/2 teaspoon minced garlicsalt and pepper
Preheat the oven to 180C.
Combine all the ingredients for the rosti in a large bowl and mix well.
Form into four patties (you’ll only need two for this recipe – so the rest are bonus!) and place on a lined baking tray. Spray lightly with olive oil and bake for 15-20 minutes or until crispy.
In the meantime, cook the bacon in a medium-sized non-stick pan.
Cut the avocado into circles to form a ‘bun’. Fill each of the avocado holes with a half a teaspoon full of relish, then top each of the bases with a slice of bacon.
Remove the rosti from the ovens and place on top of each of the bases, then top with the avocado ‘lid’. Sprinkle with sesame seeds and serve.
