If you're not sure about tofu, this flavoursome dish is a great introduction to this alternative protein.
Ingredients 2 tablespoons vegetable oil 2 cloves garlic, minced 400 grams firm tofu, chopped into small cubes 2 carrots, peeled and thinly sliced 1 red capsicum, thinly sliced 1 yellow capsicum, thinly sliced 1 green capsicum, thinly sliced 12 snow peas, ends cut off 1 broccoli, chopped into florets 1 small zucchini, roughly chopped 2 tablespoons honey 1.5 tablespoons reduced-salt soy sauce Method
Marinate the tofu in half of the honey and soy sauce for 30 minutes.
Heat half of the oil in a wok over a medium heat. Add the garlic and marinated tofu and stir-fry until browned. Remove the tofu and garlic and set aside.
Add the remaining oil to the wok, along with the vegetables and the rest of the honey and soy sauce. Turn the heat to high and stir-fry for three to four minutes. Add one-quarter cup of water and continue to cook, stirring continuously, for two more minutes.
Return the tofu and garlic and stir through the vegetables. Remove from the heat and serve with brown rice.
