Cauliflower pizza

Forget gross tasting gluten-free bases and boost your veggie intake with this crispy pizza base!


1 small head of cauliflower 1 tablespoon chia seeds 1 tablespoon LSA (linseed, sunflower, almond meal) 1 tablespoon parmesan 1 tablespoon dukkah (or other herb/spice of your choice) 1 egg salt and pepper Topping suggestion 1/4 cup tomato paste 1 cup spinach, roughly chopped 50 grams roasted pumpkin 10 sundried tomatoes 1/4 cup of reduced-fat cheese


Chop the florets off the cauliflower and blend in a food processor until fine. Tip the cauliflower into a large bowl and microwave for three minutes. Place the cauliflower into a cheese or hessian cloth and squeeze out all the excess liquid. Return the cauliflower to the bowl and add the remaining ingredients. Stir well. Spread the mixture evenly on a lined pizza tray and then bake for 15 minutes. Remove from the oven, top with your favourite ingredients or our suggested combination and then return to the oven for another 10 minutes.
