This is a tasty alternative to sometimes average gluten free pizzas, and a good way to boost your vitamin A levels. Next time you have the oven on, put a sweet potato in to roast so you're ready to go when pizza cravings set in.
1 large sweet potato 1 tablespoon olive oil 1 egg 2 tablespoons gluten free plain flour 1 tablespoon almond meal salt and pepper to taste 1 tomato 2 tablespoons crumbled feta 1 cup spinach 2 tablespoon pesto
Preheat oven to 180°C. Place the sweet potato on a baking tray with a drizzle of olive oil. Bake for 45 minutes or until soft in the middle (test with a skewer).
Next, mash the roast potato, skin and all, in a large bowl, until it forms a smooth paste.
Add the egg, almond meal and flour and stir well.
Line a pizza tray with baking paper, and spread the sweet potato mix evenly over the base. Return to the oven for 25 minutes.Remove and top with pesto, spinach, tomato, and fetta.
Return to the grill for five minutes or enjoy as is.
