These zesty treats are a delicious lunchbox filler or snack. Even better, they're free of dairy and refined sugar.
Base 3/4 cup cashews 1/2 cup macadamias 3 tablespoons maple syrup 1 tablespoon coconut oil 1/2 cup desiccated coconut Filling 1.5 cups cashews 1/2 cup macadamias 1/2 cup coconut cream juice of half a lemon zest of a 1/2 lemon 1 teaspoon vanilla extract 3 tablespoons cacao butter 2 tablespoons coconut oil 2 tablespoons pure maple syrup Topping zest of 1/2 lemon 5 figs, thinly sliced
Place the ingredients for the base into a food processor, and blend until smooth and sticky. Press the mixture into a medium-sized tin or freezer-safe glass dish. Then cover with cling film and freeze for 20 minutes. Meanwhile, prepare the filling. Rinse the food processor then add all the ingredients for the filling. Blitz in the food processor until well-combined and smooth. Once the base has set, spread the filling mixture on top, then return to the freezer for another 20 minutes. Finally, remove the dish/tin from the freezer. Scatter the zest over the top and then press the fig slices into the top. Cut into 16 chunks and serve.
