A tasty and protein-packed meal that'll help keep you full.
120 grams lamb, diced1 tablespoon white wine vinegar1 tablespoon oreganojuice of 1/2 a lemon2 cloves of garlic, crushed and finely chopped1/4 cup greek yoghurt1/2 cucumber, finely diceddill2 tablespoons olive oil2 wholegrain wraps1 cup lettuce, roughly chopped10 olives, halved10 cherry tomatoes, halved1 tablespoon of feta cheese, crumbled
Place the lamb, white wine vinegar, oregano, lemon juice and half of the garlic into a bowl. Massage the mixture into the lamb, cover and refrigerate for half an hour.Meanwhile, prepare the tzatziki by combining the remaining garlic with the yoghurt, cucumber, dill and half of the olive oil.Heat the remaining oil in a small pan over medium heat. Add the marinated lamb and stir until cooked through (roughly three minutes).To build the souvlakis, top each wrap with tzatziki, lettuce, olives, tomato, lamb and feta cheese. Wrap tightly and enjoy.
