A perfect morning tea treat, without the sugar overload!
2 cups self-raising flour1 cup Greek yoghurt1/2 teaspoon vanilla extract2 eggs40 grams softened butter1/4 cup coconut flour2 tablespoons brown sugar2 teaspoons cinnamon1/2 cup sultanas
Preheat the oven to 180°C.Combine the flour, yoghurt, vanilla, butter and one of the eggs. Mix well and then use your hands to form aball of dough.Tip half of the coconut flour onto a clean surface. Place the dough ball onto the surface and sprinkle the remaining coconut flour on top.Roll the dough out into a large rectangle, then top with the brown sugar, cinnamon and sultanas.Slice lengthways and roll into six thin sausages. Spin each sausage into a snail shape.Whisk the remaining egg and brush it over the buns.Place onto a lined baking tray and bake for 20 minutes or until golden-brown.Remove from the oven and enjoy warm.
